WINEMAKER'S NOTES
Grapes are harvested by hand in boxes. In the winery, the bunches are elected by hand and then destemmed. Then a cold pre-fermentation maceration for 5-6 days starts. The alcoholic fermentation takes place with natural yeasts in stainless steel tanks - of small volumes - together with extraction works such as pigging and pumping-over. Finally, after devatting, malolactic fermentation is induced naturally.

PALATE On the palate it is very intense, full-bodied and well-structured, with
pleasant tannins.

AROMA On the nose, notes of violets and red fruits, all perfectly blended with hints of spices and cocoa from its time in oak barrels.
