WINEMAKER'S NOTES
Manual harvest and destemming. A pre-fermentative cold maceration is carried out. Alcoholic fermentation occurs with selected yeasts, at a controlled temperature of no more than 26°, where delicate pumpin-overs is carried out to achieve a good extraction of color and aromas. Finally, devatting takes place and malolactic fermentation is induced.
